Potato Burritos with Avocado Jalapeno Sauce By Maxine Platt

Equipment:
Food Processor
One large pot
One large pan

Ingredients:
3 lg sweet potatoes
3 med white potatoes
3 TBS Peanut oil
1 lg Onion, chopped
1/4 cup chopped fresh cilantro
salt and pepper
1 TSP chili pepper
1/4 TSP ground red pepper (cayenne)
1/2 TSP dried oregano
tortillas

Directions:
Cut up and boil potatoes until tender.
Heat peanut oil, cook onion. Add potatoes to pan, Add cilantro, chili pepper, cayenne, and oregano to potatoes. Add 1/3 cup water from boiling potatoes. Cook until potatoes are golden brown.

Avocado-Jalapeno Sauce:

Ingredients:
1 medium avocado
1 small onion, chopped
1 small jalapeno, seeded and chopped
¼ cup coarsely chopped cilantro
2 cup sour cream
salt and pepper

Directions:
Place all ingredients into blender. Blend until smooth - pulsing in short spurts if necessary. Chill in fridge.
Enjoy. You can garnish your burritos with cheese, tomatoes, and lettuce.

I love the avocado jalapeno sauce. I even used it on a sandwich!
